Ingredients

  • 4 medium sweet potatoes (about 8 ounces each), peeled and cut into a large dice
  • 1/4 cup buttermilk, warmed slightly
  • 1/4 cup orange juice
  • 2 teaspoons orange zest
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground nutmeg
  • 1 tablespoon unsalted butter, optional

Directions

Steam the potatoes in a large covered pan fitted with a steamer basket until they are tender, about 8 minutes.

In a large bowl mash the potatoes with the buttermilk and orange juice. Stir in the zest, salt, and nutmeg. Serve the potatoes topped with the butter, if desired.

    Not bad, but skip the orange

    I love sweet potatoes and I love orange zest, but I wasn't too keen on the flavors combined in this dish. I would make it... again but skip the orange juice/zest. I also left out the nutmeg. I did use the butter and thought the potatoes had a nice texture overall.Read more

    I steamed the sweet potatoes until they mashed with a spoon, added 1/2 c. of low fat buttermilk, no butter,fresh OJ and... nutmeg, used the emersion blender to puree, turned out great!Read more

    Even if you add butter they didn't have any flavor. And they were very hard to mash and didn't come out to the right... consistency. This was a bad replacement for regular mashed potatoes.Read more
