Ingredients

  • 1/2 bell pepper, cut into 1-inch pieces
  • 1 stalk celery, cut into 1-inch pieces
  • 1 carrot, peeled and cut into 1-inch pieces
  • 8 cauliflower florets or mushrooms
  • 8 cherry tomatoes
  • 1 cup hummus

Directions

Skewer the vegetables onto a wooden skewer and wrap with aluminum foil. Serve with the hummus.
