Ingredients

  • 2 tablespoons olive oil
  • 1 teaspoon ground cumin
  • 1/2 teaspoon ground coriander
  • 1/4 teaspoon cayenne pepper
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon fresh ground black pepper
  • 1/4 teaspoon salt
  • 3 whole-wheat pitas, cut into 1/8's

Directions

Preheat oven to 350 degrees F.

Combine olive oil and all spices in a large bowl. Add pita wedges and toss to coat, Spread in 1 layer on a baking sheet and bake for about 15 minutes, tossing once, or until pita is brown and crisp. Cool completely before serving.

    I have had better pita chips where they were just brushed with olive oil and a little salt. The spice mixture was fine but did not elevate the chips to a "wow" taste. I could take them or leave them and ended up leaving them for the plain soft pita instead. I agree with one review that the oil and spice mix is not enough for the amount of chips in the recipe - it needs to be doubled.

    Since I was taking these to a party, I cut back on the seasonings a bit. I do not like things too spicy, and these were perfect. I served them with Ina's roasted eggplant spread and it was a perfect match! I mixed the spices with the oil and then brushed it on the pita wedges-I think that was easier than tossing the chips in the oil and seasonings were better distributed that way.
