Ingredients
- 4 plum tomatoes, cored, seeded and cut into large chunks
- 1 jalapeno pepper, stemmed, seeded and sliced
- 1 tablespoon lime juice
- 2 teaspoons olive oil
- Salt and pepper
Directions
Put tomato, pepper, lime juice, and olive oil in a blender and puree until smooth. Season with salt and pepper.

Overall great recipe. Turned out a bit juicier than anticipated. Also, not as much kick, even though I added 2 jalapenos. But the taste was still great! I'd make it again, but probably w/ some tweaks. Also, I used lemon juice as that's what I had on hand.

This is so easy to do and very good when done. What I like about it is you can use it for so many different meals.

I make salsa when we have fajitas at home, but this time my hubby asked me to make this salsa. It had a fresh flavor, but it was too thin, and the flavor was a little on the blah side. I like my salsa to be chunky and full of onions, cilantro, lime, two or three kinds of peppers, and garlic. (Maybe it is because I am from Texas??
