Ingredients
- 1 pint fresh blackberries, rinsed and hulled
- 1 pint fresh raspberries, rinsed and hulled
- 1/2 pint fresh strawberries, rinsed and quartered
- 2 large bananas, peeled and cut into 1/4-inch slices
- 2 medium oranges, peeled and cut into segments
- 2 cups medium diced fresh pineapple
- 1 lemon, juiced
- 2 tablespoons chiffonade fresh mint leaves
- 1/2 cup granulated sugar
- 2 cups heavy cream
- 1/2 cup sifted confectioners' sugar
- 1 teaspoon pure vanilla extract
- 1 cup coconut flakes, toasted
Directions
In a large bowl, combine all the fruit. Add the lemon juice, mint and sugar. Mix well and set aside. In a cold bowl of an electric mixer, combine the cream, sugar and vanilla. Using an electric mixer fitted with a whip attachment or hand-held mixer, whip the cream until soft peaks form. To assemble, spoon some of the fruit mixture in the bottom of each parfait or martini glass. Sprinkle some of the coconut over the fruit. Spoon some of the whipped cream over the coconut. Continue layering until all of the ingredients are used. Serve immediately or chill until ready to serve.

I love this recipe, and 95% of my friends do too -- only my one friend who doesn't like mint votes it down, but even he had a second helping! It's fresh, easy, and great on a picnic.
I add a couple of tablespoons instant pudding to the whipped cream before whipping -- makes it stable enough to take on a picnic.
Don't leave out the toasted coconut -- its worth the trouble!!

There isn't a meal I haven't served this with, it's wonderful it's not your grandma's ambrosia and she'll love it better than her's too.. The mint and whipped cream put this over the top

I made this fruit salad for a dinner party and everyone enjoyed it. I was supposed to bring dessert and I wanted to bring something that went with the "Breakfast for dinner" entree. Fruit salad was an appropriate choice.
The most notable thing about this recipe is the inclusion of mint. It was delicious! And it put me on a kick of trying mint in everything for a few weeks. Mint really makes the difference in this recipe. Also, the touch of vanilla in the whipped cream was lovely!
I left out the banana when I made this recipe.
