Fresh ginger, garlic and scallions can make any recipe sing – even a side dish like this one! Just toss some rice and aromatics in a skillet and you have the perfect sidekick for any weeknight dinner.
Cook 2 sliced garlic cloves in vegetable oil in a large nonstick skillet over medium-high heat until golden. Remove with a slotted spoon. Add 4 teaspoons minced ginger and 2 sliced scallions (dark greens reserved) to the skillet; cook 2 minutes. Add two 10-ounce bags frozen white rice; cook 4 to 5 minutes. Stir in 2 tablespoons soy sauce and 1 tablespoon sesame oil; cook 1 minute. Top with the garlic, scallion greens and toasted sesame seeds.
