Directions
Make Classic Sugar Cookies with 1 cup granulated sugar total (omit confectioners') and lemon zest instead of orange; omit baking powder. Chill. Pulse 1/4 cup granulated sugar and 1 tablespoon lemon zest in a food processor. Roll dough into two 1-inch-thick logs and roll in the lemon sugar. Freeze logs 20 minutes, then slice 1 inch thick. Bake 20 to 25 minutes at 325 degrees.

Good lemon flavor, but 1 inch thick slices is too thick. I am adding this to my Christmas Cookie assortment.

These were good. I added lemon pie filling into "volcano" dent. and topped with a little powdwered sugar. Everyone lovd them

Basically this is nothing more than a lemon sugar cookie, but the shape is cute and kids will get a kick out of how they bake into "volcanoes". They are pretty tasty too! Use 3 lemons in order to get the 1T + 1 t zest. Make sure to mix in the flour/salt by hand, in order to not overwork the dough and cause a tough cookie. Kids can help roll the dough into logs, cover in the lemon sugar and then cut into 1" sections. I also added 1/2 tsp lemon extract to the dough for added lemon punch. I would definitely make these again.
