Ingredients

For the topping:

  • 3 tablespoons sugar
  • 1/2 teaspoon cinnamon

For the cookie dough:

  • 3 1/2 cups flour
  • 1 tablespoon baking powder
  • 2 teaspoons baking soda
  • 1/4 teaspoon salt
  • 1/4 teaspoon cinnamon
  • 1 cup butter
  • 2 cups sugar
  • 2 eggs
  • 1 tablespoon light corn syrup
  • 2 1/2 teaspoons vanilla extract

Directions

In a small bowl, stir together the sugar and cinnamon and set aside.

To make the cookie dough, stir together the dry ingredients.

In a bowl with a paddle attachment, cream the butter. Add the sugar and continue to mix, then add the eggs, corn syrup, and vanilla, and mix thoroughly. Add the dry ingredients and mix until blended. Chill dough 1 hour if it's sticky or difficult to handle.

Preheat oven to 375 degrees F.

Roll balls of dough about the size of a walnut then roll them in the cinnamon sugar to coat. Place on an un-greased sheet pan 2 1/2 inches apart. Bake for 10 to 12 minutes until puffed up and the surface is slightly cracked. Let cool on the sheet pan a few minutes before removing to a wire rack to cool.

    The last reviewer, I'm sorry to say, has no idea what a snickerdoodle is supposed to be. Has all the vanilla, sugar, and... cinnamon flavor a snickerdoodle is designed to have, and a perfect cracked top. And they're MEANT to be flat! Also, to address the flavor comment, it's VANILLA.     I made a batch of these to take to a work party (the recipe made 38 cookies) and my 7 coworkers ended up devouring the whole... batch! It's a good thing I ate one before I took them in, because there were none left over at all!! I have never gotten so many compliments on a recipe before. I think I'm going to be making these for years to come! The next time I make them, though, I will use less vanilla. I use the Madagascar Bourbon vanilla extract (the same one Ina uses on Barefoot Contessa), and it is very strong. So if any of you use this vanilla also, I think it really only needs 1 & 1/4 teaspoon.Read more

    I have made these 5 times, and they have always come out wonderful... I wouldn't change a thing! I will say, beware of... overcooking. If they are a little crunchy when they come out of the oven, they will be REALLY hard when they have cooled (not a problem if your spouse or kids are right there eating them when they come out of the oven, but I hear most families like saving some for later...). FYI: I like my cookies chewy, and it seems that you can only get chewy or rock hard with this recipe. Read more

    This cookie is a no go for me. I found the cookie to be far too sweet and it didn't rise the way a cookie should.
