Butter each slice of bread on 1 side. Put 4 slices of bread, butter side down, into a large skillet. Top with a slice of cheese and 1/2 cup deviled ham. Place another slice of bread, butter-side up, onto each sandwich. Cover the skillet, put it on medium heat, and cook until the bottoms are nicely browned, about 5 minutes. Turn the sandwiches over and cook until the bottoms are browned, about 3 minutes. Serve while hot.

Winning Deviled Ham (Recipe courtesy Sam Garruto):

1 pound smoked ham, cut into 1-inch cubes

1/2 cup mayonnaise

1/4 cup prepared mustard

1/2 cup chopped onion

2 tablespoons chopped fresh parsley leaves

3 tablespoons maple syrup

2 tablespoons hot sauce (recommended: Tabasco)

1 tablespoon Worcestershire sauce

2 teaspoons paprika

1 teaspoon mustard powder

Salt

Pepper

Combine all ingredients in a food processor and blend until smooth. Use as a sandwich filling or spread on crackers for a snack.

Yield: 2 1/2 cups

    The deviled ham and cheese sandwich is an excellent recipe that is creamy, tangy, and easy to make. It has a wholesome flavor and is a good recipe with which you can experiment, and substitute ingredients as I did out of necessity, yet still be confident that you will end up with a good dish. Therefore, while looking for a duck recipe, I adapted this deviled ham recipe for duck. My duck recipe substituted the following: duck for ham; Dijon for prepared mustard; 1 tsp powdered onion for 1/2 cup onion; 1 tsp powdered parsley for 2 tablespoons fresh chopped parsley; mozarella for pepper jack cheese; and no maple syrup, paprika, mustard, salt or pepper.
