Ingredients

  • Vegetable oil, for frying
  • 1 egg white
  • 1 cup dark beer
  • 1 cup all-purpose flour
  • 3/4 teaspoon kosher salt, plus extra for sprinkling
  • 1 large onion, ends trimmed and skin removed
  • 3 Granny Smith apples, peeled and cored
  • Salted Cinnamon Sugar, recipe follows

Directions

Pour enough oil in a medium saucepan to reach a depth of 2 inches. Heat the oil over medium heat until a deep-fry thermometer registers 375 degrees F.

In a medium mixing bowl whisk the egg white until frothy. Stir in the beer. Add the flour and salt. Mix until the batter is smooth. Set aside.

Cut the onion into 1/2-inch slices and separate into rings. Slice each apple into 5 rings and pat dry with paper towels.

Dip the apples slices into the batter and allow any excess batter to drip off. Fry for 1 to 2 minutes each side until golden brown. Using a slotted spoon, transfer the fried apple rings to paper towels to drain. Repeat with the onion rings.

Transfer the apple and onion rings to serving platters. Sprinkle the onion rings with salt. Sprinkle the apple rings with the Salted Cinnamon Sugar. Serve immediately.

Salted Cinnamon Sugar:

  • 3 tablespoons sugar
  • 2 tablespoons cinnamon
  • 1/2 teaspoon kosher salt

Combine all ingredients in a small bowl. Store airtight in a glass or plastic container.

    Too much effort for result. Apples and Onions did not seem to go together. Apples were much better served w/ice cream. Beer batter was too runny and seemed not to stick to onion when placed in hot oil at given temperature. Much better to buy frozen onions then to go through trouble of making them. Sorry Giada, I love your recipes, this one though was not one of your best.:{

First thing tried in my new deep fryer. Didn't try apple rings but the onion rings were tasty, easy, and great the next day on a lunchtime cold cut sandwhich.

I loved the beer batter, I have tried other batters before but this is my absolute favorite! I did not try the onion rings, I used green tomatoes and did the apples but sliced them thinner to get more of a crunch. I served both tonight for my entire family and everyone loved them.
