Ingredients

  • 4 teaspoons red wine vinegar
  • 1/4 teaspoon salt, plus more for seasoning
  • 1/8 teaspoon freshly ground black pepper, plus more for seasoning
  • 3 tablespoons extra-virgin olive oil
  • 2 cups finely chopped romaine lettuce (from 1/2 head)
  • 2 cups finely chopped radicchio (from 1/2 large head)
  • 1/2 cup drained canned white beans, rinsed and patted dry
  • 8 oil-packed sun-dried tomato halves, drained and chopped

Directions

Whisk the vinegar, 1/4 teaspoon of salt, and 1/8 teaspoon of pepper in a large bowl to blend. Gradually whisk in the oil to blend. Add the lettuce, radicchio, beans, and sun-dried tomatoes. Toss to coat. Season the salad, to taste, with more salt and pepper, and serve.

    The best salad!

Rated: 5 stars out of 5
The beans really make this salad a meal! I have this by itself or along side chicken or pork. It goes wonderful with... Giada's stuffed pork chops with sundried tomatoes and spinach! Everyone seems to like this salad and it is a staple in the salad section of my recipe book!Read more

Simple and light to balance a more complex meal

Rated: 5 stars out of 5
The only change I made was adding pealed orange slices (as Giada has done in other recipes, using a paring knife to make... pealing easy)--I tend to like a little sweetness to balance the bitterness of the radicchio. The juice from the orange sweetens the vinaigrette just a little making a really nice effect. Read more

    Great Salad

Rated: 4 stars out of 5
This is a beautiful salad. Very colorful. I added a little rice wine vinegar, some dijon mustard and a small amount of... sugar to the salad dressing because I thought it was a little bland. I added some celery, radishes and gorgonzola cheese to the salad. It was delicious and I got rave reviews from our guests.Read more

Made this salad as a side to lasagna and it was pretty good. I would make this again.

This salad is fresh, lite and filling. Just perfect for our hot Arizona summers. Thanks, so much Giada.
