Ingredients

  • Vegetable cooking spray
  • 1/2 cup plain bread crumbs
  • 1/3 cup chopped fresh flat-leaf parsley
  • 1/4 cup chopped garlic and herb-marinated sun-dried tomatoes
  • 2 cloves garlic, minced, optional
  • 2 eggs, at room temperature, lightly beaten
  • 2 tablespoons whole milk
  • 1/2 cup crumbled feta cheese
  • 1 1/2 teaspoons kosher salt
  • 1 teaspoon freshly ground black pepper
  • 1 pound ground turkey, preferably dark meat

Directions

Place an oven rack in the center of the oven. Preheat the oven to 375 degrees F.

Spray a 9 by 5-inch loaf pan with cooking spray.

In a large bowl, stir together the bread crumbs, parsley, sun-dried tomatoes, garlic, if using, eggs, milk, feta, salt, and pepper. Add the turkey and gently stir to combine, being careful not to overwork the meat.

Carefully pack the meat mixture into the prepared pan and bake until the internal temperature registers 165 degrees F on an instant-read thermometer, about 45 minutes. Remove from the oven and let rest for 5 minutes. Transfer to a cutting board and slice. Put on a serving platter and serve.

    I made this for a group of my friends. It was a simple to create and tasted great. It had a nice wow factor for a meatloaf.... I had a jar of sundried tomatoes with garlic, but no herbs. So, I just added a bunch of fresh herbs from my garden and it turned out beautifully. For easy serving, I made the meatloaf in muffin tins. I doubled the recipe and had 12 good sized servings.     i have made this recipe about a dozen times since i first saw it on tv earlier this summer. honestly, it comes out perfect... every time - light, fluffy, a tiny bit crisp on the outside, and very moist with just a bit of tang. i substitute the sun-dried tomatoes (my husband hates them) for fresh cherry tomatoes that i quarter. also, i put a little bit of extra breadcrumbs on the bottom of the loaf pan before putting in the stuffing, which guarantees that the meatloaf comes out of the pan every time with no problems. it's a little on the small side, so i'd say three people is really the maximum for this meatloaf at dinner (though i've made two before). it pairs really well with fluffy buttermilk mashed potatoes, too. this recipe is so easy, i've gotten in the habit of always having most of the ingredients on hand so that i can throw this together if i need to.Read more

    Made this several times, very flavorful and moist meatloaf. It seems strange to put feta in a meatloaf but it works. Note... that feta can be pretty salty depending on what you buy so you might need to adjust the salt to account for that.Read more

    This turned out ok (I used less salt per previous comments). I wouldn't say it was moist - I think there needs to be some... kind of sauce to go with it. I would make this again because its easy and you have leftovers.Read more
