Ingredients
- 2 cups apple juice
- 1 tablespoon coarsely ground black pepper
- 1/4 cup salt
- 1/4 cup light brown sugar
- 1 teaspoon red pepper flakes
- 5 rib end pork chops, about 1 1/2 pounds
- 1 tablespoon grill seasoning
Directions
In a large pot over medium-high heat, add 1 cup of water, apple juice, pepper, salt, sugar and red pepper flakes. Bring to a simmer making sure to stir occasionally to dissolve the salt and sugar. Remove from heat and add to a large bowl with 2 cups of ice.
Once the brined has cooled add pork chops. Brine for at least 4 hours or up to 24 hours in the refrigerator.
Remove pork from brine, rinse with cold water and pat dry with paper towels.
Heat grill or grill pan over medium heat. Sprinkle 1 side of the pork chops with 1/2 the grill seasoning. Place chops on hot oiled grill, seasoned side down. Sprinkle the topside with remaining grill seasoning. Grill chops for 4 to 5 minutes per side. Let rest for 5 minutes before serving.

I brined the pork for just over eight hours and made the grill seasoning myself from herbs and spices I had on hand. The chops came out very well seasoned and juicy and even got compliments from the picky eater in my house. I love recipes like this that taste great and can be made with ingredients that I normally keep around.

Made this for my husband today and he loved it! Even his daughter, who can't stand pork chops or ham, said they were good. Very easy, a quick brine, super moist and full of flavor! I used Mcormic Kosher Salt in the brine and Chicken Grill Spice during grilling. Not salty at all with that combo. This is my new go-to Pork Chop recipe!
Update:
I've made this several times since my last post and it's perfect every time! Everyone asks how I can bbq a pork chop, especially while camping, that comes out juicy and flavorful! I try to tell them it's just talent, but they can tell by the look on my face that I hold a secret recipe! So, I share.

This was an easy way to add flavor to pork chops, and my first attempt at brining. I only let the pork chops brine for 4 hours, which was enough to infuse flavor - and next time I will try for a longer period of time which I think will be even better. I particularly appreciated that it was made with ingredients that are readily on hand. I will definitely do this again! I made this recipe exactly as described. So easy!
