Ingredients

  • 2 cans black beans, drained, about 30 ounces
  • 1 (15-ounce) can corn, drained
  • 2 Roma tomatoes, diced
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1/4 cup diced green onions
  • 1/4 cup diced pineapple
  • 1 tablespoon chopped cilantro leaves
  • 1 jalapeno, seeded and minced
  • 4 tablespoons sherry vinegar
  • Juice of 1/2 lime
  • 3 tablespoons honey
  • 1 tablespoons salt
  • 1 teaspoon black pepper
  • Pinch ground cumin

Directions

Mix all ingredients in a bowl and refrigerate for 1 hour.

    I made this for a family picnic a few weeks ago and when I first tasted it, I wasn't too impressed. However, after I... refrigerated it for a few hours, it was DELICIOUS! I had had some like this at one of my favorite restaurants and wanted to duplicate it. This was even better. It was a big hit at our picnic. Tasty, fresh, and healthy. I added avocado at the last minute, which was great. The only thing I would change is to perhaps add less vinegar. The taste was fine, but there was a little too much liquid in it.     This is a GREAT [and very versatile] side dish. The colors and taste are soooo appealing and fresh - really... brightens your presentation. I serve it with cuban-style pork tenderloin and rice - just perfect! This salad is wonderful with anything grilled or roasted. Additionally, it's a terrific salsa with tortilla chips. A couple very slight alterations; in place of canned products, I prefer fresh pineapple and freshly-roasted corn cut off the cob. Smoked sea salt enhances the flavor of the cumin.     This turned out to be a refreshing addition to our summer dinner tonight. We had it on the side with grilled lamb burgers,... along with Bobby Flay's cucumber and red onion with mint yogurt salad. I cannot wait to have leftovers of this dish tomorrow--and it seems pretty healthy to me, though the search filters out the recipe if you hit low fat or low calorie. Great way to get in some vegetables. I doubled the amount of tomatoes and red pepper and end result was super tasty.Read more

    Awesome side salad or served with corn scoop chips (scoop all of the flavors) I forgot to ad the cumin and used our left... over roasted corn that I cut off of the cob. Unbelievable. Huge hit and oh so flavorful. My friends and family thank you as well.Read more
