Ingredients

  • 2 cans black beans, drained, about 30 ounces
  • 1 (15-ounce) can corn, drained
  • 2 Roma tomatoes, diced
  • 1/4 cup diced red bell pepper
  • 1/4 cup diced red onion
  • 1/4 cup diced green onions
  • 1/4 cup diced pineapple
  • 1 tablespoon chopped cilantro leaves
  • 1 jalapeno, seeded and minced
  • 4 tablespoons sherry vinegar
  • Juice of 1/2 lime
  • 3 tablespoons honey
  • 1 tablespoons salt
  • 1 teaspoon black pepper
  • Pinch ground cumin

Directions

Mix all ingredients in a bowl and refrigerate for 1 hour.

    I absolutely love this salad! I make it without the pineapple & honey so it's more spicy than sweet. Perfect! Great as a... side...I also make corn chips with corn tortillas. (cut into sixths, spray with pam, sprinkle with sea salt and bake until crispy) Then we use the leftovers for quesadillas, homemade chipotle-esque burritos, Santa Fe-style chicken salads. The possibilities are endless!!! A wonderful recipe that we will use over and over for years to come!!!Read more

    I have seen this recipe many times in my FN searches and have hesitated to make it because I'm usually not a big fan of cold... bean salads... I'm so glad I finally gave it a shot! I made it for picky eaters along side Ina's Baked Shrimp Scampi and everyone loved it, including me! I followed the recipe exactly and it was super easy, fast and delicious.
