Ingredients
- 7 cups water
- 1 (7-ounce) package pearl tapioca
- 10 black Chai tea bags
- 1 pint half-and-half
- Spiced Simple Syrup, recipe follows
- Ice
- Large barrel straws
Directions
In a large pot, add the water and the pearl tapioca. Bring to a boil, over medium heat, then cover and cook for 16 minutes. Turn off the heat and allow it to sit another 15 minutes, covered. Strain into a container and add 1/3 cup of the Spiced Simple Syrup. Refrigerate until ready to serve.
Bring 2 quarts of water to a boil over medium heat. Add the tea bags, let steep for 7 minutes and then remove. Allow the tea to cool.
When ready to serve, add 1/3 cup tapioca pearls, 1/3 cup half-and-half, and 1/4 cup spiced simple syrup to each glass. Fill the glasses with ice and top with the tea. Serve with a wide barrel straw to get the pearls.
Spiced Simple Syrup:
- 1 cup water
- 1/2 cup dark brown sugar
- 1/2 cup sugar
- 1 cinnamon stick
- 4 whole cloves
Combine all the ingredients in a small pot. Bring to a boil over medium-high heat and cook for 5 minutes. Remove from heat and let cool. Strain the mixture into a glass jar and discard the cloves and cinnamon. The syrup will keep refrigerated for up to 2 weeks.

I love the flavor of vanilla. I was wondering if you can add a vanilla bean to the simple syrup or would that be too strong of a flavor? I am going to try this it looked so refreshing on TV.

what he made is called boba or bubble tea. its popular in the west coast and it orignates in asia so to find tapioca pearls u just go to an asian mart and look for them!! and its not a misprint. they are tapioca balls but just way bigger. and since "C." you live in california, you should know about boba...theres boba tea shops everywhere in cali.

I've never heard of them before. Where can you buy them? Too bad FN doesn't have a way that we can contact them about misprints on the recipes! Tyler Florence's website has quite a few, so you're better off watching the show & then downloading the recipe afterwards!
