Ingredients

  • 1/4 cup unsalted almonds
  • 1/4 cup unsalted walnuts
  • 1 cup nonfat plain yogurt
  • 1 cup nonfat milk
  • 2 tablespoons honey
  • 1 cup rolled oats
  • 1/4 teaspoon vanilla extract
  • 2 cups mixed berries, fresh or frozen (strawberries sliced)

Directions

Toast the nuts in a dry skillet over a medium-high heat until golden and fragrant, about 3 minutes. Chop them coarsely then set aside.

In a medium bowl, stir together the yogurt, milk, honey, oats, and vanilla. Divide the oat mixture evenly among 4 small dishes or parfait glasses. Top each with a half cup of berries, then 2 tablespoons of nuts. Cover tightly and refrigerate overnight.

Per Serving (serving size 3/4 cup muesli, 1/2 cup berries, 2 tablespoons nuts)

    I love this recipe. When I make this again, I might add the nuts just before eating. The nuts got a little less crunchy after sitting for a few days in the refrigerator.

    I love this, Ellie! I change up the fruit and nuts with whatever I have on had. Delicious and healthy! I like plums and peaches and sprinkle with pumpkin pie spice.

    This was very delicious!!! I modifyed it alittle bit so it would make enough for just me. I did 1/3 cup of lowfat yogurt, 1/3 cup rolled oats, and 1 tbsp. honey and then mixed it all together. It doesn't really need to sit overnight if you'd like you can actually eat it right away. The first time i did it with 1/2 cups berries and 2 tbsp nuts. The other times i just did it without those. I also mixed in a tbsp of granola cereal and that made it really good too. I really like this recipe!!!
