Ingredients

  • Salt
  • 1 pound baby carrots
  • 2 tablespoons butter
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • Freshly ground black pepper
  • 1/4 cup chopped flat-leaf parsley

Directions

In a medium saucepan, bring water to a boil. Add salt and then carrots and cook until tender, 5 to 6 minutes. Drain the carrots and add back to pan with butter, honey and lemon juice. Cook until a glaze coats the carrots, 5 minutes. Season with salt and pepper and garnish with parsley.

    I made this as a side for Thanksgiving. Everybody loved them. I followed the recipe exactly that time but have made some... slight tweaks since: I steam the carrots instead of boil them. It only takes a tiny bit more time and saves all the good nutritional content. Also, I leave the carrots slightly underdone at this stage before tossing them into the glaze mixture, as they will cook further in while in the glaze sauce and you don't want mushy carrots. The second time I made it I also had the glaze sauce going while the carrots steamed. This way it thickened up quicker. If you wait to combine it when the carrots are done steaming then the glaze is too watery. Lastly, I also put in 1/3 less butter and it was just as good as the first time i made it. The important flavors to me were the sweetness of honey and tang of lemon. I love this recipe Read more

    I didn't read through all the comments but this recipe works just a well if you steam the carrots before glazing them, rather... than boil which cooks out most of the good stuff bringing your nutritional value to pure cellulose (fiber) = zero! Never boil veggies, only steam. great carrots I am making these tonight!Read more

    These were really great. For the comments about not being healthy and nutritional charts, take the ingredients and count... them out separately and always remember that a recipe is a guideline, if there are things you dont like about it, tweak it. Get real guys.Read more

    I have made many a recipe for glazed carrots, some better than others...this recipe was delicious! I will make this version... from now on...a word to those complaining about the lack of nutritional values...if you are that into nutrition then it should be obvious to you that 2 tbls. of butter and 2 tbls. of honey in this recipe are minimal amounts and not even close to 'killing/clogging' levels...what a ridiculous waste of time it was to write that and Food Network is better off without you as a viewer... I enjoy your network very much and am smart enough to bypass any recipe I feel would not be a good fit into my diet regime... Read more

    This was the perfect sweetness for an already sweet vegetable. And for those who wish there was a nutritional value added to... this recipe: The only fat/cholesterol would be in the 2 Tbsp butter and that wouldn't be much considering you are using 1 lb carrots. Also, if you are worried about your health, you can substitute margarine or even olive oil instead. It is such a shame that you would sacrifice such great recipes when you can substitute the "bad" ingredients yourselves.Read more
