Ingredients

  • 2 medium butternut squash (4 to 5 pounds total)
  • 6 tablespoons unsalted butter, melted
  • 1/4 cup light brown sugar, packed
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper

Directions

Preheat the oven to 400 degrees F.

Cut off and discard the ends of each butternut squash. Peel the squash, cut them in half lengthwise, and remove the seeds. Cut the squash into 1 1/4 to 1 1/2-inch cubes and place them on a baking sheet. Add the melted butter, brown sugar, salt, and pepper. With clean hands, toss all the ingredients together and spread in a single layer on the baking sheet. Roast for 45 to 55 minutes, until the squash is tender and the glaze begins to caramelize. While roasting, turn the squash a few times with a spatula, to be sure it browns evenly. Taste for seasonings and serve hot.

    I am making them for the second time. The first time it did take much longer than the recipe stated but they were well worth... the wait! My fiance and I had two friends over (one of which did not like squash, but at the time was too polite to say this) and we had left overs of everything else except the squash. I was completely oblivious to exactly how much everyone loved it until a couple weeks ago the "squash hater" asked when we were going to invite him over for dinner again. He exclaimed everything was So good, especially the squash and "I don't even like squash." So tonight, my fiance and I are being selfish and making it all for just us!     I decided to try this recipe only after reading everyone's comments. The flavor was good...the texture was not. Mine also... came out a bit mushy, but I think I just cooked it too long. I want to try this again; maybe it was the squash. I did put it under the broiler to make the crispy crust. Next time - cook 35 minutes, then put under the broiler. Read more

    This was the first time I've ever made squash it it was wonderful!! My husband even loved it! The texture and taste were... perfect. For those who rated it as "awful" not sure what went wrong but this was very good. I do agree with others that it does not take the full 55 mins to cook. The one downside: I was actualy out of breath trying to cut and peel the darn thing!!! Had no idea how hard that would be. Nevertheless I will make this again but will probably shell out the extra money for the pre-package type that is already cut up.Read more

    This is the best! Many recipe reviews say that someone who usually hated something loved whatever when that recipe was used.... It never happened to me. My husband hates squash, no matter how I doctor it up. Not this time. He actually liked this! No small victory. I cooked it exactly according to the recipe. It was beautifully caramelized with a crispy crust on the sides that lay on the pan. It was on the lowest rack in the oven, which might have helped that effect along. This is a keeper.     DELICIOUS! Squash had a tasty caramelized outer crust and was wonderfully moist and tender inside. As with others, my... squash was ready in about 35 minutes. Served with leftover pork loin and potatoes roasted at same time as squash.Read more
