Ingredients

  • 2 medium butternut squash (4 to 5 pounds total)
  • 6 tablespoons unsalted butter, melted
  • 1/4 cup light brown sugar, packed
  • 1 1/2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper

Directions

Preheat the oven to 400 degrees F.

Cut off and discard the ends of each butternut squash. Peel the squash, cut them in half lengthwise, and remove the seeds. Cut the squash into 1 1/4 to 1 1/2-inch cubes and place them on a baking sheet. Add the melted butter, brown sugar, salt, and pepper. With clean hands, toss all the ingredients together and spread in a single layer on the baking sheet. Roast for 45 to 55 minutes, until the squash is tender and the glaze begins to caramelize. While roasting, turn the squash a few times with a spatula, to be sure it browns evenly. Taste for seasonings and serve hot.

    I loved this recipe!!! The best. I use to make butternut sqaush caramelized on top of the stove. This recipe gives it a... whole new flavor. Since I am the only one who likes butternut sqaush, I bought a quartered piece. It was already pealed and I just needed to cut it up. I also decreased all the amounts because this called for 2 butternut squash. It came out heavenly. Thank you Contessa. Anyone who didn't like it didn't cook it as directed. It only took 45 minutes though because I used only a quartered piece. I will make this again in a heartbeat. So easy!Read more

    I am making them for the second time. The first time it did take much longer than the recipe stated but they were well worth... the wait! My fiance and I had two friends over (one of which did not like squash, but at the time was too polite to say this) and we had left overs of everything else except the squash. I was completely oblivious to exactly how much everyone loved it until a couple weeks ago the "squash hater" asked when we were going to invite him over for dinner again. He exclaimed everything was So good, especially the squash and "I don't even like squash." So tonight, my fiance and I are being selfish and making it all for just us!     I decided to try this recipe only after reading everyone's comments. The flavor was good...the texture was not. Mine also... came out a bit mushy, but I think I just cooked it too long. I want to try this again; maybe it was the squash. I did put it under the broiler to make the crispy crust. Next time - cook 35 minutes, then put under the broiler. Read more
