Ingredients

  • 2 pounds large shrimp (16 to 20 per pound), peeled and deveined (see note)
  • 3 cloves garlic, minced
  • 1 medium yellow onion, small-diced
  • 1/4 cup minced fresh parsley
  • 1/4 cup minced fresh basil
  • 1 teaspoon dry mustard
  • 2 teaspoons Dijon mustard
  • 2 teaspoons kosher salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 cup good olive oil
  • 1 lemon, juiced

Directions

Combine all the ingredients and allow them to marinate for 1 hour at room temperature or cover and refrigerate for up to 2 days.

Skewer the shrimp. I use 3 or 4 shrimp on a 12-inch skewer for dinner. Heat a grill with coals and brush the grill with oil to prevent the shrimp from sticking. Grill the shrimp for only 1 1/2 minutes on each side.

Note: I leave the tails on when I'm peeling the shrimp.

OMG - too much salt. I have hypertension and have to watch this. The salt stung my throat as if I had swallowed a big gulp of ocean water. Only marinated for 2 hours. Most likely will half or omit salt if I make again. Did anyone else have this problem???

This was so good and super easy.....the lemon and Dijon made it very flavorful....I will be making this again and often.

I dont often write a review but every once in a while you come across a recipe that really deserves it. I have tried many marinades for shrimp and nothing ever really stood out. This is by far THE BEST marinade and it was simple to prepare. My husband thought it was out of this world and we're making it again just a few days later. I've thought about even using it on steak. I served the shrimp over salad with homemade dijon dressing. It was so full of flavor. Tomorrow we are having it over Ina's Orzo salad. This is my goto marinade for sure. LOVED IT!
