Ingredients

  • 1 (12-ounce) 1-inch thick New York strip boneless beef top loin steak
  • Kosher salt
  • Freshly ground black pepper
  • Olive oil
  • 2 yellow onions, sliced in rings
  • 1/2 teaspoon fresh thyme leaves
  • 1 recipe Mustard Mayo, recipe follows
  • 2 mini focaccia buns, sliced in 1/2
  • 1/2 cup baby arugula

Directions

Season the steak liberally with salt and pepper on both sides. Heat 1 tablespoon of olive oil in a medium saute pan over high heat until it's almost smoking, then sear the steak on each side for 1 minute. Reduce the heat to low and cook the steak for about 7 to 10 minutes, turning once, until very rare in the middle. Remove to a plate, cover tightly with aluminum foil, and allow to sit for 10 minutes. Slice the steak into strips.

Using the same saute pan, heat 1 1/2 tablespoons of olive oil over medium heat. Add the onion and thyme and saute for 10 minutes, until the onions are brown and caramelized, stirring occasionally.

To assemble the sandwiches, spread a tablespoon of Mustard Mayo on the bottom half of each bun. Place a layer the steak strips on top of the mayo, sprinkle with salt and pepper, and top with the caramelized onion rings. Place the baby arugula on top of the onion rings, and cover the sandwiches with the top half of the buns.

Mustard Mayo:

  • 3/4 cup good mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 tablespoon whole-grain mustard
  • 2 tablespoons sour cream
  • 1/8 teaspoon kosher salt

Whisk the ingredients together in a small bowl. Serve at room temperature.

Yield: 1 cup

    This recipe is one of my Food Network favs! I have made it several times and finally had to review it Everything here... pairs perfectly and the flavors all bounce off of each other creating a flavor explosion!!! It's easy to make and easy on your budget as most of the ingredients are usually found on hand. I don't own a grill--before I learned Ina's tin foil trick I used to broil steaks--eeew. Now this is my go to preparation for steaks. Tonite I'm going to try with French bread to change it up. Read more

    This looked so good that I made it within a few days of seeing the show. OMG! My husband and I were dying while eating the... sandwhiches! Unbelievable, the flavors are great, what a treat for dinner. I had tri-tip on hand and picked up ciabatta bread instead. The substitutions were delightful.     I saw the show where Ina featured this sandwhich, I thought wow, if this would taste as good as it looked I would be happy. ... I was amazed at how tender the steak was, and the carmelized onions and thyme, what more can I say. My tongue was tasting so many things it was just awesome.     I saw this recipe a few times on the TV and thought Ina is butchering a steak sandwich! Being from Philly, I have a set... perception of what a steak sandwich is. I was chagrined at my Philly arrogance when I took my first bite. This is a delicious and simple take on a Philadelphia classic. The mayo sauce and caramelized onions marry well. It's a combination that reminds me of Outback's Blooming Onion. Some things I might suggest: use left over steak. You can cut it very thin when it is still cold and spread it out on a plate in a microwave for 45 seconds. I like the sauce so much that I would recommend tossing the steak and onions in it and use it liberally. Though I like the mayo sauce very much, I think some horseradish and ketchup would add to its flavor. I'd like to try this with chicken, seitan or another meat substitute to make it a little healthier. Read more
