Ingredients
- 1/2 cup good mayonnaise
- 2 tablespoons small-diced pickles or cornichons
- 1 tablespoon Champagne or white wine vinegar
- 1 tablespoon capers
- 1 teaspoon coarse-grained mustard
- Pinch kosher salt
- Pinch freshly ground black pepper
Directions
Place all the ingredients in a food processor or mini chopper fitted with a steel blade and pulse several times until the pickles are finely chopped and all the ingredients are well mixed but not pureed.

Definitely yummy, but I have only had a modified version.
I had no pickles and forgot the vinegar. I put in some whole small capers (ca 1 tbs and about a tbs of finely chopped capers along with a little of the caper jus. I just stirred everything in a small bowl, and I used a no egg garlic mayo, and some Labne cheese. Topped it of with a small squeeze of fresh lemon jus. Beats bought tartar for sure!
