Ingredients

  • 1/2 cup good mayonnaise
  • 2 tablespoons small-diced pickles or cornichons
  • 1 tablespoon Champagne or white wine vinegar
  • 1 tablespoon capers
  • 1 teaspoon coarse-grained mustard
  • Pinch kosher salt
  • Pinch freshly ground black pepper

Directions

Place all the ingredients in a food processor or mini chopper fitted with a steel blade and pulse several times until the pickles are finely chopped and all the ingredients are well mixed but not pureed.

    I still have my cocktail sauce brought to me in Atlanta from the best fish camp in North Carolina, but nobody's tartar sauce... is as good as this! The capers and champagne vinegar make it PERFECT! Upscale, yet easy to put together. As a Southern gal, I ONLY use Duke's mayonnaise. Don't shortchange any of your food, but especially this tartar sauce, with anything less than the best. Like other reviewers, I also used relish instead of pickles and spicy brown instead of grain mustard.Read more

    I have always made homemade tartar sauce as the stuff in store is just hideous. Anyway, this is the best I have ever tried. ... We even dipped the potatoe wedges in it. We like it a little tangier, so I add a little extra vinegar. I also add some chopped fresh chives from the herb garden. Mmm, Mmm good!!Read more

    This was soooo good that I couldn't stop raving, until no one else would listen... that's why I'm writing a review! LOL I... really like homemade tartars that have a sweetness to them... so I used sweet relish instead of regular pickles. I also really like dijon instead of spicy brown mustard. I had also read the reviews about wanting an extra spice or "kick".... so instead of using Tabasco like the other reviews... I used shallots.... which always go GREAT with white wine or champagne vinegar!!! This tartar was so easy to make... and it also had the perfect balance of sweetness, tart and savory! I bet it would also be really good with a splash of fresh lemon juice! Thanks Ina!!!Read more

    This is a great, basic tartar sauce! I had to use digon mustartd instead of grainy mustard and didn't have any pickles, so I... used sweet relish, and the results were perfect. I agree with the other reviewers, however, that it needs a little kick; I added a couple dashes of Tabasco and now it's perfect! The fish is cooking and I can't wait to slather the sauce all over it!Read more
