Ingredients

  • 7 ounces sweetened shredded coconut, toasted
  • 1 recipe Homemade Marshmallow batter, recipe follows
  • Confectioners' sugar

Directions

Sprinkle half the toasted coconut in an 8 by 12-inch nonmetal pan. Pour in the marshmallow batter and smooth the top of the mixture with damp hands. Sprinkle on the remaining toasted coconut. Allow to dry uncovered at room temperature overnight.

Remove the marshmallows from the pan and cut into squares. Roll the sides of each piece carefully in confectioners' sugar. Store uncovered at room temperature.

Homemade Marshmallows:

  • 3 packages unflavored gelatin
  • 1 1/2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/4 teaspoon kosher salt
  • 1 tablespoon pure vanilla extract
  • Confectioners' sugar, for dusting

Combine the gelatin and 1/2 cup of cold water in the bowl of an electric mixer fitted with the whisk attachment and allow to sit while you make the syrup.

Meanwhile, combine the sugar, corn syrup, salt, and 1/2 cup water in a small saucepan and cook over medium heat until the sugar dissolves. Raise the heat to high and cook until the syrup reaches 240 degrees F on a candy thermometer. Remove from the heat.

With the mixer on low speed, slowly pour the sugar syrup into the dissolved gelatin. Put the mixer on high speed and whip until the mixture is very thick, about 15 minutes. Add the vanilla and mix thoroughly.

    I never knew making marshmallows could be so easy. However, there were a few things I'd change about the recipe. First... of all, it doesnt take 15 minutes in the mixer; anywhere between 7-9 minutes was plenty, and I could see my KitchenAid mixer struggling a little at that point, but it was done. Use a glass pyrex dish to make these...and use plenty of PAM, they'll come out with almost no difficulty! I'd make them again!Read more

    My Son doesn't care for coconut, but loves S'mores. I crushed up graham crackers and put in the bottom of the pan, then... poured the marshmallow on. I chopped up some chocolate and spread all over the top. Instant S'more. When you cut it into squares, it's just the perfect bite.Read more

    These are great if you just like to eat raw marshmallows. They do not work well for s'mores, the melting point is too low,... can't get them toasted.Read more

    I didn't think I would be able to make this before I started, but I just figured I'd give it a shot and see what happened. My... family (and me too!) couldn't believe I actually made marshmallows, and they taste soooo much better than store bought ones! The recipe turned out perfect. The only suggestion I would have is for FN to post how many ounces of unflavored gelatin to add because you can buy it in different sized packages at different places so I accidentally screwed up the amount of gelatin the first time around but the second time worked perfect!Read more

    Each year I bake desserts at Christmas and give them to all of my friends and each year I try all new things to include in... the baskets....except for these, which are included EVERY year! I get the most compliments on these, and while making homemade marshmellows with toasted coconut would scare almost anyone away, the recipe really is relatively simple for such a "sophiticated" dessert!
