If you want to cut the calories in Jo's totally delicious Nantucket Cranberry Pie, just a wee bit, try this variation.
Ingredients
- 2 tablespoons unsalted butter
For the topping:
- 2 cups fresh or frozen cranberries
- 1/3 cup sugar
- 1/3 cup chopped walnuts, optional
For the batter:
- 3/4 cup flour
- 3/4 sugar
- 1 teaspoon baking powder
- 1 teaspoon salt
- 3/4 cup milk
Directions
Preheat the oven to 350 degrees F.
Place the butter in a 9-inch round non-reactive baking dish. Set pan in oven long enough to barely melt butter or melt in microwave. Remove from oven, swirl pan to coat evenly with butter, set in a warm place.
Toss cranberries with sugar and walnuts, set aside.
In a mixing bowl, stir together flour, sugar, baking powder and salt. Add milk and stir until just combined. Pour the batter into the pan, it will be pancake batter thin, this is what you want. Pour cranberry mixture over batter, distributing evenly. Bake for 40 to 50 minutes or until cranberries are bubbly and soft and slightly golden. Serve warm

Not as good as the original. Let's keep your original one, Kathleen, sorry. If you want to slim it, us granulated Splenda instead of sugar. Great""........

This recipe came out soggy and a little salty. The original version is much better. I bake a lot and I am sorry that I wasted some perfectly good fruit on this recipe when I could've just made the original instead. I tried to rescue what I can because I don't like to waste food but unless there was a major food shortage, I would call it inedible.
The only good thing I can say is that it smelled good baking and then going down my garbage disposal.

At first I thought I didn't like how the recipe turned out because it seemed a bit too soggy and mushy. It also didn't come out the way you would think a typical "pie" would. But, after I let it sit for a while and especially on the second day I started liking it more and more. The flavors do blend in together very nicely and I loved the taste of cranberies. I added walnuts, which was great and even my bf who hates walnuts ate the pie and asked for seconds! I'm definitely making this again and the best part is that it's the most simple pie you'll ever make!
