Spicy Garlic-Butter Wings

Years ago, I was lucky enough to film my show "Beach Bites" on the North Shore of Oahu in Hawaii. We stopped on the side of the road to have lunch from a truck serving garlic shrimp. The shrimp was cooked to perfection in a spicy, garlicky, buttery sauce. I got to thinking about making a similar sauce for chicken wings. The shrimp is coated in a mixture of flour and cayenne before it is cooked, so I did the same thing with the wings and then baked them in the oven. The result is crispy wings that are like they just came out of the fryer. Toss them in garlic butter and trust me, you can’t stop eating them. They’re insane.

  1. Preheat the oven to 400 degrees F. Line a baking sheet with parchment and set aside. Arrange the wings on a paper towel-lined sheet pan and pat them dry with a paper towel. Season with salt and pepper. Transfer the wings to a large bowl.
  2. In a small bowl, mix the flour, 1 teaspoon salt, cayenne, garlic powder, onion powder and 1/4 teaspoon black pepper. Add the seasoning to the wings and toss thoroughly to fully coat each wing. Place the wings in a single layer on the prepared baking sheet. Bake until golden brown and cooked through, 40 to 45 minutes.
  3. Meanwhile, in a small saucepan over low heat, melt the butter with the grated garlic and salt to taste, stirring occasionally. Transfer the wings to a clean large bowl, drizzle with the garlic butter, season with salt and pepper and toss to coat. Return to the baking sheet and bake until nicely browned and a bit crispy, an additional 5 to 7 minutes. Transfer to a platter and season with salt and pepper. Serve immediately.
