  • 10 lasagna noodles
  • 12 ounces ricotta
  • 1 egg, lightly beaten
  • 1/4 cup chopped flat-leaf parsley
  • 1/2 cup Parmesan, grated
  • 12 ounces Mozzarella, grated
  • 3 cups meat sauce
  • Meat Sauce:
  • 1 pound ground beef
  • 1 pound spicy sausage
  • 1 large onion, chopped
  • 4 cloves garlic, minced
  • 1 bay leaf
  • 2 teaspoons dried basil
  • 2 teaspoons dried oregano
  • 2 tablespoons olive oil
  • 3/4 cup red wine
  • 3 (28-ounce) cans crushed tomatoes
  • 1 carrot, chopped
  • Salt
  • Pepper

Prepare noodles as instructed on package. Drain. In a medium bowl, combine ricotta, egg, parsley, 1/2 cup Parmesan and salt and pepper. Spread 3/4 cup meat sauce in bottom of 9 by 13 inch baking dish. Lay 3 noodles down in pan and spread with ricotta mixture. Sprinkle with Mozzarella and top with meat sauce. Repeat procedure for one more layer ending with last three noodles and then sauce. Top with remaining Mozzarella and 1/2 cup Parmesan. Bake for 45 minutes or until bubbly at 375 degrees F. Remove from oven and let lasagna stand for 15 minutes

Meat Sauce:

Heat oil in a large heavy pot over medium high heat. Brown ground beef and sausage. Stir in onion and cook for 4 minutes. Stir in garlic, bay leaf, basil and oregano. Add wine, tomatoes and carrot. Bring to a boil and reduce heat to medium. Simmer uncovered until sauce has thickened about 45 minutes. Taste and season with salt and pepper.

Yield: 12 cups

    Consistently good, my family loves it.
    This recipe has gotten rave reviews even from my picky eaters. I leave out the parsley and use low fat ricotta.
    Very good lasagna recipe, the sauce is alright, I use my own recipe instead as I like it better but the recipe itself is very good. Not quite enough ricotta cheese, I had to add extra.
    I've definitely had better lasagna, but as a from-scratch recipe, this was pretty easy. I would recommend making your own noodles rather than store bought, it can put this recipe over the edge to being great. I really liked the meat sauce, it was simple and had good classic flavors. The ricotta needs to be increased to approx 15 oz.
    My family loved this recipe. It has been added to my arsenal of family favorites. Try it, it's worth the time and it realy is easy...
    I've tried a ton of lasagna recipes and this is without a doubt my family's favorite! They also love when I just make the meat sauce and serve it with pasta. When friends get married and ask for "favorite family recipes" this is always one we share!
    All good, my recommendation is to add a little milk to the ricotta mixture, really smooths it out for spreading!
    This was the first and only lasagna I have made, very simple (although a little time consuming) and very tasty. I substitute ground turkey for ground beef and omit the carrot.
    I've been trying to make lasagna for years and I finally found a recipe that both I and my family was happy with. This is easy and delicious. Next time I will double the filling and make one pan for now and freeze one for later. If you can, make this earlier so you can let it set and it will stay together in beautiful perfect layers. Thanks this is a keeper.
    Great recipe, everyone loved it. As mentioned, make extra ricotta, not enough. Also, I used turkey meat and chicken sausage instead, and low-fat cheeses.
    This lasagna is sooooo delicious! The only addition I made is to also use a bechemel sauce in the layering process which makes it even richer and more decadent. I also make sure to use fresh ricotta cheese and fresh mozzarella, makes it really creamy and yummy. I freeze the leftover sauce and use it over spaghetti or to make another lasagna!! My italian boyfriend told me I can't make this for his family because it will put them them to shame!
    The sauce made this terrific. The ricotta cheese, added a delightful creaminess to the lasagna. Our guests raved about the dish all evening. It has now replaced ny dear Mother's lasagna.
    the recipe gives a wonderful ratio to add your own touch. I used a 1/3 more sausage and 4 cans of tomatoes (adjusting the seasoning accordingly) and had a lot of sauce left over by design. I also increased the ricotta mixture by about a 1/3......
    This is the best lasagna recipe. Everytime I make it people are always complimenting how good it taste. Especially with the hot pork that I use which addes a little heat.
    This was my first time making lasgana and it turned out great! My only suggestion is to double the ricotta mixture.

    The recipe did not turn out well at all. Is it 3 28 oz cans or 28 oz total of tomatoes? This needs to be specified. Good try. Next time the "cook" (not chef) will recommend a recipe fit for my dogs. Don't quit your day job!
    I've tried this recipe before. it turned out great and my husband and I enjoyed the dinner and left-over. I am cooking it for dinner tonight.
    Okay, I don't get to cook often, so find many recipes challenging my skills and failing my expectations. This recipe is excellent -- easy to do and better than any lasagna you will ever eat. My husband said he has not had a better dish anywhere, including restaurants. For two people, this made plenty of meals. So, if you are a small family, plan on freezing it. Believe me, the frozen meal is just as tasty as the first one.

    One issue I experienced is that the meat sauce had a bit too much liquid. So, I removed about a cup before layering it on the noodles.

    The lasagna could have used more ricotta as someone else mentioned and turned out O.K. the meat sauce is what I now use for all things Italian, I am making some right now!
    This will, no doubt, become your failsafe lasagna recipe. Just enough ingredients to make you feel you're really cooking, wonderfully authentic flavors, and easy enough to keep a big dinner stress free (especially if you substitute "no boil" lasagna noodles). I've made it three times and have never been disappointed. Other than the no boil noodles, my only change was adding extra ricotta cheese preference. Don't be afraid of the spicy sausage, it adds a perfect flavor, not spicy at all. This is absolutely my all time favorite lasagna recipe.
    This was my first attempt at totally from scratch lasagna. Well besides the noodles. My family loved it. We followed the directions to a T. (WE: My 10y/o daughter helped. She wants to attend culinary school when she graduates high school. So she helps a lot in the kitchen.) Although it was very hard to wait for it to finish cooking; it gives off a very nice aroma.
    Really enjoyed the lasagna - but i thought the meat sauce lacked the punch i like. Next time around i will use a spicer sausuage to give it a bit more zest
    I made this for the first time last week and my family loved it,especially the sauce. The only problem I found with the recipe was the amount of parsley to use so I added what I thought was the right amount I didn't have the red wine so I added what I had it still turned out great. My grandson loved the sauce so much he ate a bowl by itself. I also used the sauce for spagetti. Easy and wonderful recipe.A repeat for my family
    My family is Italian and I have my Grandma's lasagna recipe, which is what I usually prepare. We just moved and the recipes are packed away, so I decided to try this one. It turned out fantastic. I used 1/2 and 1/2 of hot and sweet Italian sausage mixed with the beef, but otherwise kept everything the same. Paired it with Fettucine Alfredo and Mozzarella Garlic Bread. I will definitely be using this recipe again - Thanks Emeril!!
    I thought it was a good recipe, but my only issue is that it didn't call for enough ricotta cheese and i had to stop midway through and go buy more
    The sauce was super easy to make and made it taste more homemade. I think this is my new recipe for lasagna from now on.

    The lasagna tasted pretty good, and the recipe is nice and simple, but the instructions are off. Easy to adjust though.
