Ingredients
- 4 ounces chevre goat cheese, room temperature
- 1/4 cup Greek yogurt
- 1/4 red bell pepper seeded and chopped, plus 1/4, for garnish
- 1 lemon, zested
- 1 garlic clove, minced
- 1 teaspoon kosher salt
- 1/2 teaspoon coarsely ground black pepper
- 1 teaspoon dried Mediterranean oregano
- 2 teaspoons chopped mint leaves
- 1 English cucumber, sliced into 1/2-inch rounds
Directions
Put the goat cheese, yogurt, 1/4 red bell pepper, lemon zest, garlic, salt, pepper, oregano, and the mint in a food processor and puree until smooth. Transfer the goat cheese mixture to a resealable plastic bag and cut a small hole in the corner. Lay out the cucumber circles and squeeze a little of the goat cheese mixture out of the bag on top of each circle. Thinly slice the remaining 1/4 red bell pepper and garnish each cucumber with 1 slice of the pepper. Arrange them on a serving platter and serve.

Did not like the combination of flavors, on the bland side, they look good though.

I didn't have much luck with this recipe. The topping was far too runny to pipe onto the cucumber. I think my Greek yogurt wasn't firm enough. It was the consistency of sour cream. Perhaps it would have been better to drain it a bit, though the demonstration did not show that. Also, I think I over pureed it. I had read the reviews, so I added a little extra goat cheese, but that did not help. I even refrigerated it for several hours and it still did not firm up. The taste was not well received at my party - a little bland for Texas, I think. I like the idea of using a cucumber in place of a cracker or chip, so I think I'll try it again with a flavored goat cheese.

Very tasty. The recipe could easily serve 8 to 12 people as an appetizer & takes a while to make so you might want to make the puree a few hours ahead of time so you just have to assemble the medallions before guests arrive.
