Ingredients

  • 1 cup water
  • 1 cup chicken stock or broth
  • 1 tablespoon olive oil
  • 1/4 cup finely chopped dried dates
  • 1 cup quick-cooking couscous
  • Salt and freshly ground black pepper

Directions

Bring the water, stock, and oil to a boil in a small saucepan over medium heat. Add the dates followed by the couscous. Cover the pan tightly with a lid, remove from the heat, and allow to sit for 5 minutes. Fluff with a fork and season with salt and pepper, to taste. Transfer to a serving bowl and serve.

    This couscous is very easy to make and you need something easy when you are making the meatballs, sauce, and carrots. The... combination of sweet and salty is unbelievable and it is worth it to make the entire meal. The couscous goes perfectly with the meatballs and sauce. The couscous would not stand by it's self that is probably why Melissa includes it with her North African meatballs recipe. I am so impressed with everything one of her recipes I have tried.
