Ingredients

Cookies:

  • 1/2 cup unsalted butter, softened
  • 2 ounces cream cheese, softened
  • 3 tablespoons granulated sugar
  • 1 1/4 cup all-purpose flour
  • Colored sugars, such as green, blue, red, silver and white

Mint Filling:

  • 1/2 cup confectioners' sugar
  • 2 tablespoons butter, softened
  • 1 or 2 drops mint extract
  • 1 or 2 drops red or green food coloring
  • Confectioners' sugar, for dusting, optional

Directions

For the cookies: Preheat the oven to 375 degrees F. Cream the butter, cream cheese and sugar until smooth using a handheld mixer in a medium bowl. Add the flour slowly, mixing on low, until incorporated. Scoop the dough into a ball using your hands and cover with plastic wrap. Refrigerate until the dough has firmed slightly, about 30 minutes.

On a floured surface, roll the dough about 1/8-inch thick. Cut out as many rounds as possible with a small cookie cutter and transfer to ungreased baking sheets, leaving about 1 inch between each cookie. Re-roll the dough scraps and repeat until all the dough is used. Use a smaller cutter, about 3/4-inch, or cut freehand with a small sharp knife to punch a small window out of half of the cookies. Place the cutouts on the baking sheets and sprinkle all the cookies and cutouts with the colored sugars.

Bake until golden around the edges, 12 to 15 minutes. Cool for 5 minutes on the baking sheets and then transfer to wire racks to cool completely.

For the filling: Place the sugar, butter, mint extract, food coloring and 1/2 teaspoon of water in a medium bowl and beat on medium speed until well combined and fluffy. Spread a thin layer of mint filling on the cookies without the windows and place the wafers with the windows on top. Sprinkle with the confectioners' sugar, if using, and serve the sandwich cookies with the cutout cookies on the side.

Notes

We truly appreciate fans' bringing concerns to our attention and are sorry for any less-than-positive experience, this recipe did test successfully as written. Times vary greatly depending on the type of oven you have, placement in the oven, brand of oven, and whether the oven is gas, electric or convection. Piercing or pricking the cookies is important as the ones we did not prick puffed up. Fans can also double the recipe if they would like to make more.

These were so delicious, as long as they freeze well - I'll find out after at christmas! - I'll definitely be making these every year. Like others I was a little nervous to try them due to some of the bad reviews, but I didn't have any trouble at all. In fact, I was surprised at how easy they were. Also, I know that the note at the bottom says that it's imortant to ***** the cookies, but I didn't and they turned out just fine. I doubled the batch and used a double shot glass for the rounds, so they would be smaller to get more cookies out of them and I used one of my daughter's hard reusable straws to cut out the window and they both worked perfectly. Making a double batch and using the shot glass, I was able to get 65 cookies! They took about 6 minutes in the oven at this size. I may even make 2 double batches next year and do a different flavored filling in the second one, maybe eggnog or gingerbread...

I made this cookie recipe with hesitation based on the reviews BUT mine turned out FABULOUS! My 4 year old helped and gobbled up 2 right away and I insisted that we needed to save them for the Holiday. I followed the directions and agree with other reviews to lessen the cook time. I baked mine for only 7 min. and they turned out perfect. I also doubled the recipe and got about 40 cookies :D I used a knife and carved out a triangle for the tops (did not take much time and used green and so they look like x-mas trees, sooo cute! This is a keeper for next year!!! YAY
also love the no egg recipe, bonus!

These are really good! I was a little scared by the reviews, but they came out well. Yes, there was a decent amount of work, but what sandwich cookie isn't? I added about a 1/2 teaspoon of vanilla into the dough. As for the amount of mint, start small and add to your liking. I must have used a smaller cookie cutter, because I got more than 12...also make a couple more bottoms to tops, definitely broke a couple while icing because they are delicate! Also, I don't think any batch I made was in the oven for more than 10 mins, so watch them!
