Ingredients
- 4 Idaho potatoes, scrubbed clean and sliced into 1/2" inch thick slices
- 3 tablespoons vegetable oil
- 2 tablespoons butter
- Salt and pepper
Directions
In a large skillet heat oil over medium high heat. Add butter and stir until melted. Add potatoes and toss to coat. Cook the potatoes for 10 minutes, occasionally tossing and stirring them. Transfer potatoes to a baking sheet and roast in oven at 400 degrees for another 20 minutes. Bake until potatoes are golden brown and crispy. Season with salt and pepper

Wasn't bad for a "baked" fry. My kids like them, so I was happy. I would make it again.

These were a big hit. Extremely easy to make & so yummy. They escaped the dreaded, "good for low fat" review & got the "Just plain Goood" review. A couple of notes -- for those doing WW points, a little high in points for one serving. Cut down on the oil a teensy bit to lower the points value. Also, very important that the oven is hot. I tried to repeat this recipe from memory & did not have a hot enough oven & ended up w/mushy potatos.
