Ingredients

  • 12 ounces green beans, sliced into 1-inch bite-size pieces and blanched until bright green
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/2 cup olives, pitted and chopped
  • 4 radishes, sliced paper-thin on a mandoline
  • 1 English cucumber, diced
  • 1 shallot, sliced paper-thin on a mandoline
  • One 4-ounce jar hearts of palm, drained and chopped
  • Extra-virgin olive oil
  • Kosher salt and freshly ground black pepper
  • Special equipment: mandoline slicer

Directions

Add the green beans, cherry tomatoes, feta cheese, olives, radishes, cucumber, shallots and hearts of palm to a large bowl. Drizzle with extra-virgin olive oil. Season with salt and pepper and serve immediately.

    This is one of my favorites. It is so good! Everyone wants the recipe when they eat it. I did make some revisions..I used crumbled blue cheese instead of feta and I put in some Italian seasoning for a little more flavor. I will mke this again.

    I also make a green bean dish very much like this. I use Carothers' Olive Oil and it turns a good dish into a great dish. Carothers' totally enhances the flavor of anything you are cooking. I have even used it in baked goods. Healthy, Spanish extra virgin oil of the finest quality. I can't put any URLs in here but Carothers Olive Oil is so easy to find. good website. :

    This salad is tasty. I almost ate the whole salad by myself. Then I had to research the calories. I figured it to be 709 calories for the whole salad. And since in has a serving size of 6 that is 118.16 calories per serving.
