Ingredients

Dressing:

  • 1 cup hulled and sliced strawberries
  • 2 tablespoons white wine vinegar
  • 2 tablespoons finely chopped fresh basil leaves
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • Kosher salt and freshly ground black pepper

Salad:

  • 5 ounces baby Spinach, washed and dried
  • 1/4 cup crumbled goat cheese
  • 1/4 cup slivered almonds

Directions

For the dressing:

Add 3/4 cup strawberries, white wine vinegar, basil, olive oil, sugar, salt, and pepper to a food processor or blender and puree until smooth.

For the salad:

Toss the spinach, cheese, almonds, and remaining 1/4 cup strawberries in a large bowl and lightly drizzle with dressing.

    Excellant!!! The sauce did not make enough so I ended up expirameting a bit. I added a bit of cold water, lemon juice, I ran out of white sugar so I used brown and honey and cider vinegar... Make to taste, you can't screw it up!!!! Oh yeah and cheddar crumbles if you dont like the other cheese.

    I LOVE this salad! I think this is a great combination of sweet and savory...for some it might be too sweet. If you're not a fan of sweet dressings, I think it could also be good with a balsamic vinaigrette.

    This dressing is the best. I followed it accurately, just added a little more oil. If you let it sit overnight, the flavor is even better. I am making another large batch to store, per husband request
