Ingredients
- 2 tablespoons white wine vinegar
- 1 lime, zested and juiced
- 1/4 cup extra-virgin olive oil
- 1 red onion, thinly sliced
- 4 cups seeded watermelon chunks
- 1 cup crumbled feta cheese
- 1/4 cup mint chiffonade
- 2 cups baby arugula
Directions
Add the white wine vinegar, lime zest and juice to a small bowl. Whisk in the olive oil and season with salt and pepper. Add the thinly sliced red onion and let marinate for 5 to 10 minutes as you prepare the rest of the salad.
Add the watermelon, feta, mint, and arugula to a large bowl. Toss with the vinaigrette and serve immediately after dressing.

WOW!!! Me and my son just made this. I'm teaching him to eat more healthy and this recipe caught my eye. I have to say, as soon as I saw this I had to make this immediately. I had to do several substitutions because of wanting to use "what I had", so here we go. I used shredded Mozzarella instead of feta, green onions instead of purple and romaine lettuce instead of arugula. I also added some cracked pepper and 1 tbsp of orange blossom honey. I also added regular store shaker parmesan cheese for a saltier flair. I whisked the vinaigrette adding more of anything to taste and then added everything else. I sprinkled a little bit more parm on top of everyone's salad. My husband and son and myself CRAVE this now. It was just unbelieveablely the best salad in the world. I can just imagine adding candied pecans and tuna or chicken.. OMGOMG.. I can't stop now. This just makes me want to be creative.

What a tasty and refreshing salad for summer. I didn't think the watermelon would go so well with feta cheese and arugula but, it works perfectly. I used a vidalia onion rather than a red one and it worked well. The red might have had too much bite to it. I'll definitely make this again before the great watermelon is gone for the winter!
