You can create up to five timers

Ingredients

  • 1 tablespoon extra-virgin or vegetable oil, 1 turn of the pan
  • 1/2 red onion, chopped
  • 1 red bell pepper, seeded and chopped
  • 1 (14-ounce) can black beans, rinsed and drained
  • 1 (10-ounce) box frozen corn
  • Salt and pepper
  • 1/4 cup smoky barbecue sauce
  • 2 tablespoons chopped chives, parsley or cilantro leaves, for garnish

Directions

Heat a medium skillet over medium high heat. Add onions and peppers and saute 5 minutes. Add beans and corn and season with salt and pepper. When corn heats through, add barbecue sauce. Stir to combine and serve succotash with chopped chives, parsley or cilantro to garnish.

    This is an absolute staple in our house. We make it all the time. We serve it with the honey nut chicken, or with tacos, enchiladas and with anything on the grill. It's an awesome side dish any time of year. We always bring it to summer parties, it's very good cold.

    This is amazing! An excellent side dish. I love the barbeque sauce with the vegatables. Served with the peanut chicken and it was yummy!

    my bf and i eat mostly vegetarian dishes, and i was searching for something simple and barbeque related for summer dinners. this could not be a more perfect recipe. it is fast, a great vegetarian barbeque option (which apparently is a rare find! and involves ingredients which i always have in the house. we make it with cajun seasoned potato wedges on the side for a quick dinner on busy nights. thanks!!
