Ingredients

  • A drizzle extra-virgin olive oil
  • 6 slices bacon, chopped
  • 1 box corn muffin mix plus ingredients according to package directions to make 1 batch muffins
  • 1 rounded teaspoon smoked sweet paprika
  • 3 to 4 tablespoons finely chopped chives
  • 1/3 pound brick sharp yellow Cheddar, chopped into 1/4-inch dice

Directions

Preheat oven to muffin mix package directions.

Drizzle a little extra-virgin olive oil into a small skillet and place over medium-high heat. Add bacon to hot pan and crisp, 5 to 6 minutes. Remove from pan and drain on a paper towel. Set aside.

Prepare the muffin mix and muffin tin to package directions. Stir in paprika, chives, chopped cheese and crisp bacon bits. Fill muffin tins and bake until golden brown.

    I took the recipe a little farther and added garlic and a tablespoon of brown sugar. I didn't have any paparika. It was... good and moist to me. I may have undercooked them abit though. My muffin pan is one of those Chef Tony silicon, very shallow.....made about 10 muffins.Read more

    These were very easy to make, and after reading some of the other posts, I added a dollop of low-fat sour cream to the muffin... mixture so that it wouldn't be dry. I'll try freezing some, because they'd make a great breakfast muffin. I did have a little trouble getting them out of the muffin tin, but I think that was because of the cheese. I used Monterey jack, which was very tasty. They'd be nice to make with Easter ham, too.Read more

    How can anyone give this recipe 5 stars. They were horrible! so dry. I don't think they would have been so bad if there was... more liquid added, plus I made them in mini muffin tins, so maybe that was the problem. I don't know but Rachael needs to tweek this recipe.Read more
