Ingredients

  • 4 cups spinach leaves, stemmed
  • 4 cloves garlic, cracked from skins
  • 1 stick softened butter
  • Salt and pepper
  • 1 cup grated Parmigiano-Reggiano
  • 1 loaf good quality Italian bread

Directions

Preheat broiler or set oven to 400 degrees F.

Place the spinach in a food processor with garlic, butter, salt and pepper and cheese and process, scraping the mixture down if necessary.

Halve bread lengthwise and slather it with spinach butter. Broil or bake to crisp, 3 minutes under broiler, 6 to 7 minutes in hot oven.

Cut into large cubes and serve with pasta.

    This will be the third year in a row that we have made this for a Halloween dinner party with some friends. We always make... Rachael's Pasta with Pumpkin and Sausage and this garlic bread. There is never any leftovers of either. It looks so deliciously spooky, but it's still so healthy for you. We will definitely continue to make it for years to come.Read more

    Can't describe how much the whole gang loved this! I wasn't sure how big a loaf of bread to get...next time I will get... bigger, because it makes quite a bit AND there were no leftovers! Heeded the warning about garlic & used a little less, quite perfect for us!Read more

    This is a really simple, delicious, and different way to have garlic bread. And I am a huge fan of spinach, so I love... finding a new way enjoy it. The spinach/garlic/cheese puree is like a mild, autumn-themed pesto and it tastes so good broiled on bread. It is heavy on fresh garlic flavor, but broiling mellows it, and the earthy, mild flavor of the spinach and sweet/sharp flavor of the cheese balance it nicely. I think the spinach puree would even be a good tossed with pasta or, if you increase the amount of butter a little, it would make a really nice compound butter for fish, poultry, or veggies--even a great topper for baked potatoes.     This is delicious garlic bread and worth trying if you like garlic and a way to get more veggies in your meals. I didn't... tell my husband where this recipe came from and asked what he would rate it. He gave it a big thumbs up and said 6!!! I have to agree. I had some shredded Italian cheese and added some of that too. I used frozen spinnach. This recipe is a keeper. I served this with home made chicken soup and also added spinnach to the soup.Read more
