VERY TASTY! LOVED IT! I DID HAVE TO COVER IT THOUGH. THE RECIPE DOESN'T STATE TO COVER IT BUT MY RICE WAS NOT FLUFFING UP SO I DID. IT WAS DELICIOUS!!! AND LIKE MOST PEOPLE SAID, THE CHEESE WAS PRICY BUT IT WAS WELL WORTH IT!!!

This was an off-the-cuff recipe search for a quick side dish to my grilled pork chops (I didn't even know that it was coupled on an episode. I didn't have parsley or manchego cheese, so I substituted scallions and "fiesta blend" cheese from my market. The recipe is very easy to make and it was EXACTLY the taste and texture I was looking for (I covered it while simmering the rice, even though the directions didn't say to. It's got a great mild flavor that isn't overpowering, even with the scallions in it. My family is digging in and devouring it right now....tons of "mmmm"s and "oh so good!"s. Definitely an addition to my recipe book!
