Ingredients
- 1 tablespoon extra-virgin olive oil
- 1 tablespoon butter
- 1/2 small onion, finely chopped
- 2 cups frozen green peas
- 1 cup ricotta cheese
- 1/4 cup chopped parsley leaves, a couple of handfuls
- 1 lemon, zested
- Salt and pepper
Directions
To a medium pot over medium heat, add oil, then butter and onion. Saute onion bits 2 minutes, then add frozen peas, raise heat a bit. Stir peas to heat them through and allow their water to evaporate. When peas are heated through, add ricotta and parsley to the pan and smash cheese together with the peas. Add lemon zest. Season mixture with salt and pepper and serve.

This was a huge miss for me. The texture just comes out weird, and the flavors aren't right for green peas. Quite a disappointment, will not make again.

We really liked this dish. I did have trouble mashing the peas. I found that a fork worked best. I also substituted orange zest for the lemon zesst and I would do it again. This isn't something you can eat a lot of. It is rich but I thought it had lots of flavor. The orange zest gave it a sweet tone. I would definitely make this again.

I can't get my husband to eat much vegetables beyond peas & corn, so I tried this. Too boring of a dish, unfortunately. I tried it a second time adding some whipping cream to try to make it more interesting, but that didn't help much. Ricotta cheese simply doesn't have much flavor to it so the dish turns out bland.
