Ingredients

  • 1 tablespoon extra-virgin olive oil
  • 1 tablespoon butter
  • 1/2 small onion, finely chopped
  • 2 cups frozen green peas
  • 1 cup ricotta cheese
  • 1/4 cup chopped parsley leaves, a couple of handfuls
  • 1 lemon, zested
  • Salt and pepper

Directions

To a medium pot over medium heat, add oil, then butter and onion. Saute onion bits 2 minutes, then add frozen peas, raise heat a bit. Stir peas to heat them through and allow their water to evaporate. When peas are heated through, add ricotta and parsley to the pan and smash cheese together with the peas. Add lemon zest. Season mixture with salt and pepper and serve.

    I tried this recipe and found it to be relatively bland. I love peas, but this one just misses the mark. The ricotta is... overpoweringly creamy with the peas and the dish could use tons more lemon flavor. This recipe would be better if you used maybe 2/3 or 1/2 the amount of ricotta, and more lemon zest and onion (I used shallots as well). I still couldn't eat more than a few bites - this is something you might put a small scoop of on the side. Read more
