Ingredients

  • 2 scoops chunky monkey ice cream
  • 1 cup toasted sweetened coconut
  • 1/4 cup chopped macadamia nuts
  • 1 canister whipped cream
  • 1 jar store bought caramel sauce

Directions

Place 2 scoops of ice cream in a dessert bowl. Top with some toasted coconut, nuts, whipped cream, a drizzle of caramel sauce and some extra coconut.

    We like Chunky Monkey and the coconut and nuts were good, but we left off the caramel sauce....a little too much sweetness. ... Like some other reviewers, I think Rachael should just eliminate desserts since they are not really her thing anyway and spend more time on regular meals. She rushes around a little too much for me....I don't cook that fast and it takes me more than 45 minutes to make most of her meals, and those are the faster ones! Rachael.....we don't need dessert....honestly! Just do the meal cooking.Read more

    Hey foodies, How ridiculous, you can tell that any of Rachel's recipes are going to be basic by the title of her show. I am... not a big fan of her either as I like to take a little more time, as I am a good cook. So why waste your time watching? Just go away and watch Barefoot Contessa.     I scream at the madness that this is considered a recipe. Isn't there a similar idea on the side of a jar of caramel sauce?... And for the morons saying "Get a life" and "You're just jealous" allow me to clear the confusion. We are not jealous and we have lives. We also have standards when it comes to cooking. That's called "being a Foodie". Something you people know nothing about. I am not jealous of Rachael Ray or anyone else for that matter. I am simply tired of hearing her name being connected with "healthy eating" when she clearly does not care about health. If she did, she wouldn't drown everything in EVOO and cheese. By the way, adding nutmeg to a dish does not constitute gourmet cooking. Let's stop the charade at that.Read more
