Ingredients
  • 2 cups frozen or canned corn, thawed and/or drained
  • 4 ounces canned pimento, diced
  • 1 (4-ounce) can diced green chiles
  • 1 teaspoon ground cumin
  • Salt and ground black pepper
  • 1 tablespoon chopped parsley leaves
Directions
  • In a medium bowl, combine corn, pimento, green chiles, and cumin. Mix well and season to taste with salt and black pepper. Garnish with fresh parsley.
