Ingredients

  • Cooking spray
  • 3 pounds boneless skinless chicken breast halves*
  • 1 cup diced onion
  • 2 to 3 cloves garlic, minced
  • 2 tablespoons fresh lime juice
  • 1 tablespoon molasses
  • 2 teaspoons Worcestershire sauce
  • 1 1/2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 cup pitted and sliced Greek olives, such as kalamata

Directions

*This amount of chicken is for 3 meals based on chicken. If you are only using it for this meal, use 1 pound.

Preheat oven to 400 degrees F.

Coat a large roasting pan with cooking spray.

In a large bowl, combine chicken, onion, garlic, lime juice, molasses, Worcestershire sauce, cumin, oregano, salt, and black pepper. Toss to coat.

Transfer chicken to prepared pan and pour over any remaining marinade. Arrange olives over and around chicken in pan. Roast 30 to 35 minutes, until chicken is cooked through. Serve 1/3 of the chicken tonight and reserve remaining chicken in the refrigerator for other meals.

First meal good; looking forward to using it in a wrap with a cool & crisp slaw!

Super easy; used 5 skimpy chicken breasts; used PickaPeppa sauce instead of Worcestershire; used a combo of bland California... canned black olives & pimento stuffed green olives. Basically, what I had in my cupboard & fridge. Next time I will serve the chicken with chopped cilantro or green onions over it for contrast in color. Tomorrow we will have a fabulous lunch with the leftovers chopped up and rolled with a shredded carrot slaw/rice wine vinegar/shallots/touch of cumin in whatever wraps are in the fridge. Thank yous to Robin & team.Read more

I thought this recipe was delicious, and the leftovers go great in a salad. Plus it is incredibly easy to make.

My husband loved this, and he is hard to please when it comes to baked chicken. I marinated the chicken for about 6 hours... before I cooked it, and I left out the olives because I didn't have any. This recipe is a keeper!Read more

I made the sauce the night before the food delivery arrived and then assembled it and cooked it while I was unloading/putting... away groceries...then I used the extra chicken to make Robin's Lime Curry stew (usually calls for shrimp - I substituted with this chicken) - so easy to get two dinners out! The house smelled of greatness the moment this easy recipe went into the oven. It met everyone in my households taste buds... with huge success! I can't wait to try the second and third dish! My favorite part is that I could throw it into the oven at the same temp as the rest of the dish...fabulous! This is my first time making Robin's recipe and I am GLAD I did! Wonderful, I'll try to make more! My husband gives it a SOLID fourRead more
