Ingredients
- 2 peaches or nectarines, halved and pitted
- 4 tablespoons honey
- 1/2 cup granola
Directions
Spray halved nectarines with neutral-flavored cooking spray. Place flesh side down on a grill pan. Grill about 5 minutes until softened. Place on a plate and drizzle each half with honey, then sprinkle granola over top.

The peaches with the honey are execellent, but preparing them for vegans was a bit of a challenge. I substituted the honey with agave nectar. Even though I'm not vegan, I thought the agave nectar gave it a very good taste.

I had to prepare the peaches before dinner, so I decided to sprinkle some cinnamon and honey on them - almost like a light marinade.
After I took the peaches off the grill pan, I added a scoop of vanilla ice cream along with the honey and granola, plus some blueberries.
It was amazing!
