Ingredients

  • 2 cooked chicken breast halves
  • 4 cups chopped romaine lettuce
  • 1 cup diced cucumber
  • 1 cup diced tomato
  • 1/2 cup chopped scallions
  • 1 cup reduced-sodium chicken broth
  • 2 tablespoons smooth peanut butter
  • 1 tablespoon reduced-sodium soy sauce
  • 2 tablespoon fresh lime juice
  • 2 teaspoons sesame oil
  • 1/4 cup dry roasted peanuts

Directions

Using a fork, pull chicken meat from bone in shreds.

Place lettuce in a large bowl (or divide onto individual dishes). Top lettuce with chicken, cucumber, tomato, and scallions.

In a small bowl, whisk together broth, peanut butter, soy sauce, lime juice, and sesame oil. Pour mixture over salad. Top with peanuts just before serving.

    Thank goodness I read the reviews before I added the disgusting watery dressing to my salad ingredients. That's why I read them, actually. I couldn't believe the dressing I made was correct. So I tossed out the whole bowl of watery peanut juice and made my own. I used a commercial low fat sesame ginger dressing (from a famous deceased actor, added some Thai chile sauce, some natural peanut butter, and a squeeze of lime juice. Giving this recipe only one star. It doesn't deserve to be on this website. Sorry.

    This was the worst recipe I've ever tried on Foodtv It was watery, I agree with the other reviews wholeheartedly!! Ick!!! I had high hopes when I read the ingredients; sesame oil, soy, lime, peanut butter but when it said to add chicken stock I wasn't sure but trusted the recipe - boy was it awful.

    OMG this is just AWFUL! No flavor and not even worth tweaking. It was a waste of good ingredients. I would not make again nor would I recommend this recipe to anyone.
