Ingredients

  • 4 eggs, lightly beaten
  • 2 tablespoons butter
  • 2 (8-inch) pizza crusts (recommended: Boboli)
  • 1 tablespoon extra-virgin olive oil
  • 2 cups shredded jack cheese blend (recommended: Colby)
  • 4 fully cooked sausage patties, crumbled (recommended: Jimmy Dean)
  • 1/4 cup shredded Parmesan
  • 1 medium tomato, diced
  • 1 teaspoon Italian seasoning

Directions

Set up grill for direct cooking over medium heat. Oil grate when ready to start cooking.

In a medium pan over medium heat, scramble eggs in butter; set aside.

Lay out pizza crusts and brush each with oil. Top with eggs, cheese, crumbled sausage, Parmesan, tomatoes, and Italian seasoning.

Slide onto hot oiled grill and cook, covered, 8 to 10 minutes or until cheese has melted and begins to bubble.

Serve hot, cut into wedges.

INDOOR: Preheat oven to 450 degrees F. Prepare pizza as directed. Bake in preheated oven for 8 to 10 minutes or until cheese is melted and begins to bubble.

Spring Break Breakfast Suprise for the Kids; A Couple of Tips

Rated: 4 stars out of 5
Add some milk to the eggs, leaving them very moist prior to topping the pizza with them. I make this the morning after we... have pizza. I make a double batch of dough, place it covered in the fridge and set it out very early the next morn to get to working temp. Also spread a tablespoon or less of butter on the topside of the crust. For a lower fat pizza use a lower fat butter or spread.Great Recipe and our kids love it. Thanks!Read more

What a fun idea for brunch!

Rated: 5 stars out of 5
I served this recipe to my house guests last week and it was a real hit! I substituted Egg Beaters for the fresh eggs, and... didn't find it necessary to scramble the eggs in butter, but they were still moist enough. I will definitely make this again - - absolutely delicious!Read more

    Delicious!

Rated: 5 stars out of 5
Super simple, super easy and super delicious! I did take other reviewer's suggestions and left the eggs a little soft... they... came out perfectly! And this is just a base - you can change it to whatever toppings/cheese you may like. The sky is the limit with this one. Very easy to modify for picky eaters! A must make!Read more

    Huge Hit for Skeptical Son

Rated: 5 stars out of 5
My son usually hate new recipes however he LOVED this one. Probably would try adding mushrooms and canadian bacon; the butter... is not needed; I just oiled my pan with PAM cooking spray. Very versatille; you could make it as healthy or hearty as you want.. Great Job SandraRead more

Just dont over cook the eggs thats the key!!!!

Rated: 5 stars out of 5
After reading the reviews I knew the eggs were the key to making this recipe work. Several reviews said it was to dry so I... knew the eggs would have to be soft cooked. Top the pizza with the eggs when they are just coming together but are still slightly runny just shy of when you would serve them on their own. The carry over cooking from their own heat plus putting them in the oven for 8 mins is perfect. I served them to 4 teenages and they loved them.Read more
