You can create up to five timers

Ingredients

  • Canola oil cooking spray
  • 1 (19-ounce) box fat-free apple cinnamon muffin mix
  • 4 (4-ounce) jars pureed organic carrot baby food
  • 1/4 cup apple juice
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1 cup sweetened shredded coconut, toasted
  • Honey Butter, recipe follows

Directions

Preheat oven to 400 degrees F.

Lightly spray a 12 cup (2 1/2-inch) muffin tray with canola oil cooking spray; set aside.

Combine all ingredients in large mixing bowl. Stir to combine thoroughly. Spoon batter into prepared muffin cups, filling each 2/3 full.

Bake in preheated oven 18 to 20 minutes or until golden brown. Serve with Honey Butter.

Honey Butter:

Combine butter and honey in a mixing bowl. Blend with an electric mixer until combined and fluffy. Serve with warm muffins

    GREAT recipe!! These carrot muffins were yum-scrum with the warm honey butter on a nice crisp fall day. I didn't have any baby food though, because I am barren, so I just pureed some carrots in my food processor - seemed to work just fine!

    I followed the recipe PERFECTLY as she did on her show (using only 2 cans of baby food AND let them bake an additional 7 minutes and they were still too doughy to enjoy. The flavor was good and the honey butter went great with the muffins, but it was hard for me to even chew the texture. Also alot of tthe muffins didn't rise properly, thus convincing me that there is just something missing. I was very excited to try these too! :(

    I have made these muffins twice already and they were awesome! I think the reason some of you might have found them to be runny or too mushy is because the size of the muffin mix you might have used. I had to use two packages of 7oz apple/ cinnamon muffin mix. Careful not to use more of the apple juice than the recipe calls for. I would definitely make them for company anytime. So quick and easy.... Thanks Sandra for another great idea!!!
