Ingredients
- 1 (16-ounce) bag frozen french cut beans
- 1 (16-ounce) bag frozen early harvest peas
- 4 strips bacon, chopped
- 1 cup red onions, slivered
- 1 1/4 cups half-and-half
- 1/4 cup cognac
- 1 (1.6-ounce) packet garlic herb sauce mix (recommended: Knorr)
- Salt and pepper
Directions
Combine frozen green beans and peas in a microwave-safe bowl. Add 1 tablespoon water, cover and heat on high or 8 to 10 minutes, stirring once.
In a large saucepan, brown chopped bacon. Remove all but 1 tablespoon of bacon fat from the pan and add onion slivers, saute until softened. Add half-and-half and cognac to pan and whisk in garlic herb sauce mix. Bring to a boil, stirring constantly. Reduce heat and simmer until thickened.
Drain green beans and peas. Add to pan with the sauce and stir. Season with salt and pepper, to taste.

I've been making this for several years, and every time we have a family dinner I'm asked to make it. The only changes I've made are to use more of the bacon grease when cookingyou th onions and to mix in the bacon instead of throwing it away

After seeing Sandra’s holiday show, I decided to make this for Thanksgiving yesterday, discounting other reviewers who said the dish was too salty. This is NOT the case. I actually even added a little additional salt at the end before serving. Instead, what I will do next time is lightly salt the beans and peas while they are cooking, seasoning in layers. The cognac adds a wonderful sweetness and depth to the dish. My guests raved about this one. In fact, it was almost the star of Thanksgiving. It’s a different twist on the usual green side. Flavorful, inexpensive to make, quick to prepare, and even a bit elegant, this will be a part of my menu for many holidays to come.
