Ingredients

  • 2 tablespoons mayonnaise
  • 1 tablespoon lemon juice
  • 1/4 teaspoon cayenne pepper
  • 1/2 cup shredded Gruyere
  • Salt and pepper
  • 1 can crabmeat, drained
  • 4 slices sourdough bread
  • 2 tablespoons butter

Directions

In a small bowl, combine mayonnaise, lemon juice, cayenne pepper, grated cheese, and salt and pepper, to taste. Add crabmeat to mayonnaise mixture and stir to combine. Spread crabmeat mixture on bread. Cover with a second piece of bread. Melt butter in a medium skillet over medium heat. Add sandwich and brown for 2 minutes; flip and continue to brown for 2 to 3 more minutes. Repeat with second sandwich. Slice and serve.

    Great sandwich! It's the third time we make it and love it, but this time we decided to change the gruyere for mozzarella and added chipotle chiles in escabeche. Chipotle chiles increase the flavor of the sandwich and gives it a nice kick of spiciness, taking out what a lot of reviewers would consider the sandwich to be: bland.

    It's quick and easy and it tastes so good. It's one of the weird things that I crave atleast once a week. I also used fresh picked crab and it was even better.

    Made this today and loved it. Wonderful combination with the crab, gruyere, cayenne, etc. Delicious. Felt like I was in a locals pub along the California coast somewhere.

    The only things I did different was that I used fresh dungeness crab, Kraft olive oil mayo, and I also added a little diced yellow onion. This was exceptional, and I'll definitely make it again!
