Ingredients
- One 17.5-ounce package sugar cookie mix
- 1 egg
- 1 stick butter, melted
- 3/4 cup flaked sweetened coconut
- 1/2 cup chopped macadamia nuts (recommended: Mauna Loa)
- 1/2 cups white chocolate chips, for drizzle
Directions
Preheat oven to 375 degrees F.
In a large mixing bowl, combine all ingredients for cookies except the white chocolate chips. Stir until soft dough forms.
Drop cookie dough by tablespoonfuls onto ungreased cookie sheet. Bake for 15 to 16 minutes or until edges are light golden brown. Remove from oven and cool 1 minute.
Melt white chocolate chips in microwave in 30 second intervals, stirring each time, until smooth. Drizzle over cookies.

This has got to be the quickest/easiest cookie I've ever made! Using a Tablespoon ice cream/cookie scoop really speeds it up. I used almonds and drizzled the cookies with some melted bittersweet chocolate....kind of a "almond joy" rather than pina colada themed like Sandra aimed at. They were very good, however my husband said he couldn't taste coconut. I think he was right on that one and I don't think it was the drizzle that camoflauged that flavor. Next time, I will add a teaspoon of coconut extract and maybe a full cup of coconut. I almost always cook/bake from scratch, but these were worth the package that went into them. They were delish from our governor's delish girlfriend!

In answer to some other posts I saw and didnt realize until it was too late for the first batch.... do not use the "tube" sugar cookie mix! Its the box stuff!! Otherwise you end up with too much butter and thats why they spread out thinly and it doesnt work! Otherwise awesome cookies! So simple!!

I had the same results as you phayes20, mine flattened out thinner than a pancake and all ran together at the edges. I didn't skip any thing and followed the directions to the letter, I thought I'd give it a second chance and bought more dough and the same thing happened! The edges of mine also became over done both batches which I'm sure is because they flattened out so bad. I even tried dropping the temp to 350 on the 2nd batch and got the same results only it took 14 minutes rather than 12 minutes to see my wasted time and efforts. Impossible to give away at Christmas like this, but I'll check back to see if anyine has any ideas.
