Ingredients
- 1/4 cup apple cider vinegar
- 2 tablespoons canola oil
- 1 teaspoon sugar
- Salt and freshly ground black pepper
- 1/2 cup chopped fresh cilantro
- 4 scallions, sliced
- 1 small head red cabbage, thinly sliced
- 1 small cucumber, peeled, seeded and thinly sliced
- 1 bunch radishes, thinly sliced (about 2 cups)
Directions
In a large bowl, whisk together the cider vinegar, canola oil and sugar. Season with salt and pepper. Add the cilantro, scallions, three-quarters of the cabbage (reserve the remaining cabbage for another use, such as Round 2 Recipe Cabbage and Beef Stir Fry), cucumbers and radishes. Toss to combine. Cover and keep in the refrigerator until ready to serve.

I never used red cabbage for cooking before and when I tried this recipe, at first felt like.. not sure if this is going to be tasty! Since I don't really eat radishes or even cucumbers often. But Sandra Lee! You did it again!!! I LOVE this recipe! Everything goes so well together & my b.f. loved it too! Very tangy & yet sweet! I just added a little more sugar than suggested because I tend to like sweet foods. Thank you so much! I will definitely make this again!
