Ingredients

  • 1/4 cup olive oil and vinegar dressing
  • 4 cups bagged baby spinach
  • 1 cup quartered artichoke hearts
  • 2 hard boiled eggs, sliced
  • 1/4 cup crumbled real bacon pieces

Directions

In a microwave-safe bowl, heat dressing in microwave on HIGH for 30 seconds.

In a large bowl, combine spinach, artichoke hearts, eggs, and bacon. Pour warm dressing over top and toss to dress salad.

Serve immediately.

    The name of the show is SEMI HOMEMADE not made from scratch. It is sad to see some of the posts written. When I work all day I dont want to come home and cook all night. I love that I can make some things and purchase others to save time but still have a good meal to serve my family. Thank you Sandra. As for those that want from scratch meals look on other shows for recipes. Sandra's recipes are for those of us pressed for time! By the way, I made this salad and served grilled coho salmon atop, wonderful!

    Yummy, Hearty, and Truly Easy!

    Omitted artichoke hearts (none on hand and added minced garlic, ultra-thin red onion slices and topped with parm-reggiano. This is such an excellent and authentic base recipe for building up with your own faves, ie fresh sliced mushrooms, bleu cheese, sprouts, and green onion tops. Excellent choice for those who work all day or don't want to spend hours on a "meal salad" - use your imagination - the possibilities are endless.
