Directions

Sparkling ginger cider is a first rate fall "mocktail." Mix 1/2 pound peeled, sliced fresh ginger into 32 ounces of apple cider and chill for about an hour. Pour into glasses filled with ice and top with ginger ale and fresh mint. To spike this punch, add brandy and top with hard cider instead of ginger ale.

    I felt that the ginger completely overpowered the apple cider, and not in a good way. Perhaps using less ginger would make a difference, or letting it sit less time. Unfortunately this was definitely not a recipe I'd try again.

    This was delicious. We made it w/o alcohol so the kids could have it too. It was a big hit. WE did let the ginger sit for longer than called for which infused the cider with a wonderful flavor.
